National Sugar Cookie Day

IMG_2129 What an awesome country we live in, do we not? National Sugar Cookie Day? Rock on! So, Cooper helped me make the dough and cut out the shapes for our sugar cookie decorating. Then the perfectionist in me took over. =) I had my friend over to help with decorating the cookies. We had a lot of fun! Not too shabby for my first official attempt and going all out decorating a cookie. And Cooper was VERY excited to see his sports-related cookies!

Here are the recipes I used for the cookies and the icing. Thank you Alissa for a fabulous sugar cookie recipe!

Sugar Cookies

3 c. flour

1 ½ tsp. baking powder

½ tsp. salt

1 c. sugar

1 c. butter

1 egg

3 T cream or milk

1 tsp. vanilla

Directions:

Mix all ingredients together, chill for 30 minutes. Bake at 400◦ for 5-8 minutes.

Icing

¼ c. meringue powder (available @ Michael’s)

½ c. water

4 c. confectioner’s sugar

Directions for icing:

In a medium bowl, beat together meringue powder and water until soft peaks form. Gently stir in sugar until fully incorporated. Icing consistency can be adjusted by adding more or less water by the tablespoon. Beginning with a few drops of food coloring, mix well to achieve desired color.
