You know those days when everything just seems to come together perfectly? I had one of those days today, and I'm on cloud 9. I won't share everything, 'cuz that would bore you, but I will share our Cool Summer Days calendar activity. Today is International Picnic Day, and it also happened to be the night of a Folsom Concert in the Park. The city has a band play live music and you can come enjoy your own picnic dinner on the lawn! (and it's free, woot, woot!) My very good friend, Kelly Jolly, came over and we made DELICIOUS sandwiches! I have to post the "recipe", 'cuz they were serious picnic material:
Chicken Prosciutto Sandwich
Directions
- Bake 8 slices prosciutto on a baking sheet at 400ยบ F until crisp, 8 to 10 minutes.
- Season 4 chicken cutlets with salt and pepper. Cook in olive oil over medium-high heat until golden.
- Form sandwiches with rolls, mayonnaise, olive tapenade, arugula, sliced tomato, the chicken, and the prosciutto.
We also had cherries, watermelon, strawberries, mac-n-cheese, carrots, cookies and fudge. The whole works for our fabulous picnic (even wine for Ryan and I - in a cute little picnic basket!) Even Ryan admitted to having a blast! The kids were dancing for literally an hour and a half straight. So much fun! Here are some of our friends we got to hang with:

The key was to find a location that distracted the kids and kept them together and focused. We sat near some bronze statues. The kids just ran laps around them. It was like follow the leader. Here's Cooper "sneaking" between the books. Adorable!
A final taste of the scenery. Even a child-sized train that went by every now and again behind us, every time Cooper would run up to us and say, "Choo-choo". He had to be sure we saw the train. Glorious start to our summer and weekend. (Make a note - the first day of summer is on Monday. We'll be celebrating by swimming in our friend's pool!)
