Monday: Oven Fried Eggplant (I may have gotten an obscene amount of eggplant in our Farm Fresh delivery this week, so…)
Tuesday: Zucchini Mac & Cheese (and, a wee bit of news…I may or may not have picked a zucchini while house hunting! The house was vacant, it would’ve gone to waste.

Saturday: Date night! Mac & cheese for the kids
